Before I knew it, the Mid-Autumn Festival had come and gone and I barely had time to break out the ingredients I bought for making mooncakes.
I managed to squeeze in 2 batches of snow skin mooncakes but there was still plenty of ingredients left.
However, I decided mooncakes don’t have to be the familiar mooncakes you normally see, with the imprint on top.
I decided I’d turn my ingredients into little balls, much like mochi. I used the same snowskin mooncake recipe I had last year.
I used 25g of lotus paste and 30g of snowskin each and that made about 12 pseudo mooncakes.
I rolled the lotus paste in dried blueberries and white chocolate chips and wrapped them with the snowskin.
After shaping the “mooncakes” into rounds I gave them another roll in sugar sprinkles, which immediately attracted the kids.
